Zuppa Toscano

This fabulous spicy Italian potato leek soup from the Olive Garden Restaurant is just addicting. Find the recipe for Homemade Italian Turkey Sausage under “Main Dishes: Italian.” I cook up several pounds of crumbled sausage at once, then freeze in ½ pound servings for quick soup preparation.

1 cup diced onions

½ cup finely chopped leeks, green onion or celery

2 Tablespoons butter

5 pounds Red potatoes quartered, then thinly sliced

½ pound Homemade Italian Sausage, cooked

½ cup healthy mayo

1 ½ Tablespoons salt

1 teaspoon pepper

2 quarts rice milk

1 teaspoon chopped parsley

1/8 teaspoons cayenne

 

Sauté onions, add potatoes, then remaining ingredients. Simmer until tender, then enjoy!

Chicken Coconut Kurma

My fun friend Joyce brought this entrée to my door as a token of her vested interest in cracking the code on this savory curry sauce. After several tries, this recipe is now a very good match.

 

2 yellow onions cut in long shreds (like very thin orange segments)

1 large garlic clove, crushed

1 (6 ounce) can tomato sauce or 1 cup cooked tomatoes

 

2 (13 ounce) cans coconut milk

½ (13 ounce) can water

1 Tablespoon curry powder

1 teaspoon each cinnamon and cardamom

1 Tablespoon salt

1 teaspoon fennel seeds

2 Tablespoons shredded coconut

1/8 teaspoons basil leaves

 

Sauté onion and garlic in oil. Add tomato sauce and simmer 5 minutes. Remove 1 cup of this mixture, puree it with rest of ingredients and simmer everything 60 minutes to blend flavors.

Stir in the following before serving over warm jasmine rice:

Diced cooked chicken (or if raw, add before simmering, the coconut milk makes it very tender.)

Cashew pieces

Golden raisins

Canned tomato chunks (plain or stewed are fine) (optional)

Homemade Rootbeer

This is the element that turns dinner into a party. Add the dry ice 10 minutes before serving, but while kids are around-the boiling and smoke are an evening’s entertainment. (Hey, drinks and a show!)

In a gallon container combine:

3 cups hot water + 1 cup agave syrup or honey (hand blend to dissolve)

1 Tablespoon root beer concentrate

5 cups cold water

 

Add about 2 pounds dry ice for carbonation.

 

Wendy's Chocolate Frosty

Adapted from my best friend, Kristyn in Williamsburg, Virginia. Crumble salted crackers on top for a multiple endorphin release experience, zowey!

In blender canister combine:

4 cups ice cubes

2 ½ Tablespoons organic (non-alkalized) cocoa powder

1/3 cup xylitol or agave syrup (xylitol tastes just like the real thing)

1 (14 oz.) can coconut cream

½ teaspoon guar gum (optional binding agent that makes frosty smooth, not icey)

 

Blend on high until smooth and creamy (about 3 minutes).
